Recipe: Kaiserschmarrn
Kaiserschmarrn (also called Kaiserschmarren) is one of the most famous desserts in Austrian cuisine. The Bulls' Corner chef reveals his special recipe. Good luck!
Ingredients for 2 persons
- 4 eggs
- 40g sugar
- 140g smooth flour
- 250g or ¼ liter milk
- 50g butter
- 1 pinch of salt
- 1 pinch of vanilla sugar
- powdered sugar for decoration
Preparation
- Preheat the oven to 190 ° C (top / bottom heat)
- Seperate the eggs
- Mix the yolk, milk, flour and salt into a smooth dough
- Beat the egg whites and sugar until stiff and add carefully to the dough
- Heat half the butter in a pan (30cm in diameter)
- Pour in the dough and bake in a preheated oven for about 12 minutes until golden brown
- Remove from the oven and cut with 2 spoons
- Caramelise lightly in the pan with the remaining butter and a pinch of vanilla sugar
Serving
- Arrange on 2 plates or in 2 small iron pans
- Sprinkle with powdered sugar
- We recommend enjoying the Kaiserschmarrn with apple sauce or stewed plums :-)
- If you’d like, you can also add raisins - just sprinkle a handful over the dough in the pan before putting it into the oven.
